Sally's Recipe of the Week: Sunday Brunch Appetizers

 

My Sunday Brunch Appetizers, Witches Brooms (my nod to Halloween) Smoked Salmon Mini Sandwiches and Gazpacho.

 

Here is what you will need to make the Smoked Salmon Sandwiches.

 

Here is what you need to make the sandwiches, Smoked Salmon,cocktail size rye bread,  thinly sliced cucumber, thinly sliced raddishes, goat cheese, butter and pepper.   I'm making two sandwiches here. This is what I had left over from brunch, I did not have time to take photos when I was making them for my guests. I would suggest that you make two sandwiches per guest.

Spread the goat cheese on both slices.

Place a slice of cucumber on one side.

Put the salmon on top of the cucumber.

Put some pepper on the salmon.

Place the raddish slices on top of the salmon. I know it may seem strange not to put the radishes and cucumber together but this way the sandwich does not fall apart when you toast it.

Butter each side of the bread.

Put in a hot pan and toast on each side.

 

Done!  These sandwiches were a huge hit at brunch.

To make the broom sticks you just need bread sticks, arugula and thinly sliced panchetta.
