Sally's Recipe of the Week: Pan Fried Grouper With Almonds

Panfried Grouper with Almonds 
Serves 2

This is not a liquid diet, you get to eat REAL food. This is one of the dishes you can have while you are on the program.

Here is what you will need to make this dish:

2 boneless, skinless grouper fillets, or one large one.
3 TBS raw almonds , or more if you like
1/8 tsp allspice (can substitute pinch of ground clove)
1/4 tsp salt
1/4/ tsp freshly ground pepper
1/8 tsp cayenne pepper
3/4 tsp paprika
3 TBS olive oil 
small bunch flat leaf parsley leaves, chopped
Lemon wedges for serving 

Here is what you need to do.

Rinse the grouper and pt dry with paper towel.  Check the fish carefully for pin bones. Using a tweezer and remove bones.

If using one large filet, slice in half.

In a food processor put in the almonds, allspice, salt, pepper, cayenne and paprika.  Pulse until pretty finely ground but do not over grind because the oil in the almonds will turn it into a paste. You want it to have a dry texture.

Spread out nut mixture in a shallow bakng dish then. Lightly brush the fish with oil, lightly salt and pepper then place in the nut mixture, coating completely. You can gently press the nut mixture into the fish.

 

In a large heavy skillet, heat the olive oil over medium high heat. Fry the fillets for about 3 minutes on each side, until light brown.


 

Slice some lemon and chop up parsley for garnish.

 

With a slotted spatula, remove the fish to a warm platter or individual serving plates and scatter with the parsley sprigs. Serve with wedges of lemon.
