Sally's Recipe of the Week: Grilled Chicken With Roasted Garlic and Oregano

Grilled Chicken With Roasted Garlic and Oregano
Serves 2

Here is what you will need:

2 boneless skinless chicken breasts
8 cloves roasted garlic
1/4 cup white wine vinegar
2 TBS fresh oregano
2 TBS fresh parsley or cilantro
1 TBS honey
1/2 tsp Kosher salt
1/4 to 1/2 cup olive oil, plus more to brush chicken.
1/4 to 1/2 tsp red pepper flakes
Salt and pepper

 


 

 

Slice the chicken open like a book. This is optional but I found it cooks
more evenly and much faster.

Brush some olive oil and season with salt and pepper.

Roast your garlic. This can be done in advance. If you don't know how
to roast garlic, click here.

Squeeze garlic into a bowl. You can save any extra in the fridge. Add salt and pepper to the extra, it makes a great spread!

Add garlic, honey, vinegar, parsley, salt, oil and oregano to food processor. Preheat your grill-pan to to medium high.

OOPS almost forgot I had some extra cilantro.

Blend it all up then scrape into a bowl and add the red pepper.
Add salt and pepper to taste, adjust the seasoning if you need to.

Put chicken on the grill. 

Flip chicken after 3 to 4 minutes. Grill until done.

Remove from grill and top with sauce!
