Turkey, Kale and Brown Rice Soup.
Based on a Food Network Recipe.
Here is what you will need to make this terrific and healthy soup!
One bunch of Kale, a red onion, 3 medium carrots, a red bell pepper, brown rice (I use the Uncle Bens Ready Rice,) a can of diced tomatoes, 4 cups of low sodium chicken broth, a handful of chopped parsley, 2 TBS olice oil, 8 ounces of ground turkey, 1 TBS herbes de Provence, Click Here for more on that,salt and pepper. Optional, grated parseman chees.
Heat the oil in a large soup pot and add chopped carrots, chopped bell pepper and chopped onion.
Saute until they turn slightly brown and get soft, about 10 minutes.
Then add the turkey and cook until it turns white and begins to brown slightly.
Add the herbs de Provence and cook for a minute. I love this herb mixture but don't add more than a tablespoon, it can easily overpower the dish.
Add the chicken broth, rice and tomatoes and bring to a boil.
Happens everytime I open a can, no matter what it's a can of. All the cats show up!
Strip the Kale from the woody stems and give it a chop. (Note I save the stems for juicing.)
Stir in the Kale and season with about 3/4 tsp of salt and fresh ground black pepper.
Turn down the heat, cover and simmer for about 15 minutes or until kale is cooked down and soft.
Spoon into bowls.
Top with chopped parsley and cheese if using. Enjoy!
