Sally's Recipe of the Week: Pan Glazed Chicken with Kale and Basil

Sally's Recipe of the Week: Pan Glazed Chicken with Kale and Basil

 My first stop to make this dish, Tunies Natural Grocery and Vitamin Market in Palm Beach Gardens! 

 

 Here is what you will need: 2 skinless, boneless chicken breasts, salt and pepper, olive oil, 2 Tbsp balsamic vinegar, 2 Tbsp honey, one bunch chopped fresh kale, 2 Tbsp chopped fresh basil, grated percorino or parmesan cheese.

 Heat oil in pan, season chicken with salt and pepper and add to hot pan.

Cook about 5 minutes a side.

 While chicken is cooking, strip kale from stems, chop and then rinse shaking off excess water.

Roll up basil leaves and slice.

 

 After you've cooked chicken on both sides, slightly lower the heat and add honey and vinegar.  Work it into the pan.

 Add Kale to pan.  I know it looks like a lot of Kale but it cooks down quick.

 Work Kale into the dish.

Remove from heat, grate some cheese over it, sprinkle basil and serve. You can actually serve it from right out of the pan!
