Sally's Recipe of the Week: New York Strip In Cast Iron Skillet

New York Steak in a Cast Iron Skillet
 
Serves 2
 
Here is what you will need:
2 New York strip steaks, about 1 inch thick
2 tablespoons olive oil
Sprig of rosemary
1 clove garlic, sliced
1/2 teaspoon salt
Freshly ground black pepper
Slice up your garlic nice and thin.
I like to trim the excess fat off steak when I'm pan frying it.  But don't toss it out. I'll explain in a second.
 
Drizzle the steak with the olive oil and scatter the rosemary and garlic slices on the steak. Season with salt and pepper and rub all over. Set aside for 20 minutes.
 

 

Heat a cast-iron skillet over high heat. Add the trimmed fat and a small amount of olive oil.
Let the fat render a bit and the oil get hot.
Add steaks to pan.
Cook for about 3 minutes per side for medium rare.
Let the steak rest for 5 minutes.
You can slice it and serve it or serve it whole.

I chose to serve it whole with some caramelized onion, green beans and couscous!
