Sally's Recipe of the Week: Moroccan Fish

This dish is great!  I used salmon, try it with your favorite flakey fish.

Here is what you will need, a couple of pieces of fish, I used Salmon, 2 large or 4 small olives, a can of diced tomatoes, one onion, 2 to 3 cloves of garlic, 1/2 tsp cinnamon and 1 TBS of cumin.  Plus Olive oil, salt and pepper.

 

 

Chop up the olives and set aside.

Heat a couple TBS of Olive Oil in a pan.  Chop up your onions.

Saute onions to soften.

 While onions are cooking grate up the garlic, then when onions are soft add garlic to pan and stir them up for about a minute.

Stir in tomatoes.

Cover and let cook down, gets rid of that "canned" taste.

Add olives.

Season the fish.

Nessel the fish into the pan.

Cover the sauce over fish.

Put the lid back on and let fish poach for 5 minutes.

Then flip the fish and put the lid back on.

Remove the fish and set aside.

Let sauce thicken up a bit if needed.  Taste sauce and adjust seasoning if necessary.

Put over fish and enjoy!
