Sally's Recipe of the Week:  Kale and Sweet Potato Hash

Kale and Sweet Potato Hash

Here is what you need:

One bunch of kale
2 medium sweet potatoes
1/2 red onion (or more if you really like onion)
1 tsp cumin
1 tsp paprika
pinch red pepper flakes
olive oil
salt and black pepper
pat of butter (optional)

Peel and dice the potatoes, set in a bowl.

 

Strip the Kale from the stems and tear into bite-size pieces.  

 

Rinse off kale under running water.

Set the kale aside and let it dry.  Slice onion.

Place onions with potatoes in bowl.

Heat oil in a large saute pan.  When the oil is hot add the onions and potatoes. Season with salt and pepper.

Add red pepper, cumin and paprika and butter if using. When onions and potatoes start to soften, add the kale. I know it looks like a ton of kale, but it wil cook way down.

Cook kale until it's soft. Taste to see if seasoning needs to be adjusted.

Once the kale is cooked put it in a serving dish as a side or you could divide it onto two plates and top it with a fried egg or chicken or cheese!
