Sally's Recipe of the Week: Basil Marinated Chicken

 

Grilled Basil-Marinated Chicken

 

 

Here is what you need:

1 tablespoon olive oil

1 tablespoon red wine vinegar

1 tablespoon chopped basil leaves, plus 4 sprigs for garnish

1 tablespoon finely chopped red onion

2 teaspoons kosher salt

1 teaspoon whole black peppercorns

1 clove garlic, chopped

4 boneless, skinless chicken breast halves (about 2 pounds)

 

Here is what you need to do:

In a ziplock bag add oil

Then vinegar

Then chop up your basil, onion,and garlic and add it 

to the bag. 

Add the salt.

Add the peppercorns.

Seal the bag and mix all the ingredients.

 

Put the chicken in the bag and seal back up.

Refrigerate for at least 3 hours and up to 12 hours.

 

When ready to cook take the chicken out of marinade and shake it off. 

 

Grill the chicken, turning once, until browned and just cooked through, about 4 minutes per side.

Transfer the chicken to a platter and garnish with the basil sprigs.

 

I served with some kale and onion saute. Enjoy.
