Sally's Recipe of the Week: Baked Halibut With Fresh Herbs

Mo and I are doing the Garden of Life, Wild Rose Herbl D-Tox.  It's a 12 day whole body herbal cleanse!  We got the suppliments from Tunies All Natural Grocery and Vitamin Market, the sponsor of this recipe page.

This is not a liquid diet, you get to eat REAL food. Here is one of the dishes you can have while you are on the program.

Baked Halibut Steak with Fresh Herbs

Serves 2

Here is what you will need.
1 pound of halibut steak, or 2, 8 pound steaks
2 TB olive oil
1 TB green onions , chopped
1 TB parsley, chopped
1 TB fresh basil, chopped
1/2 tsp dried thyme, you can use 1 tsp fresh, I just never have it on hand
1/2 tsp salt
1/4 tsp pepper
2 TB lemon juice
lemon wedges for garnish optional
Here is how you make it.

- Preheat oven to 425.  Pat dry your fish.

If the skin is on, I recommend you take it off or when you buy the fist ask them too.  Set the fish aside.
Mix the chopped onion, parsely, basil, thyme in a small bowl.

Brush oil on both sides of the fish and season both sides with salt and pepper.
Place the fish on a baking sheet. Take some of the herb mixture and sprinkle over fish, pressing it into the fish. Squeeze some lemon juice on the fish.
Place fish in oven and bake for 10 to 12 minutes, just don't overcook!
Remove from oven.

Serve each piece with a lemon wedge if using.

It's really easy. I served with wild brown rice and oven roasted broccoli, which you can pop in the oven while the fish is cooking.
Both the rice and broccoli are permitted on the cleanse.
